A fresh botanical gin crafted by a restaurant brand.

The base spirit is a ginjo sake lees shochu from a Japanese sake brewery. Distilled with eight botanicals—each chosen for their unique character and story—inspired by the name “NUMBER EIGHT DISTILLERY.” The elegant aroma of the ginjo shochu and the carefully selected botanicals create a perfectly balanced expression. The first impression is a soft, full-bodied floral aroma, followed by a bold and powerful finish that showcases the distinctive character of NUMBER EIGHT. These botanicals are thoughtfully selected from ingredients regularly used in HUGE restaurants or sourced locally from Kanagawa Prefecture—each with its own story.
▼ Yerba Buena (Cuban Mint)
This is the mint generously used in HUGE's signature mojitos served at our restaurants. While spearmint and peppermint are more commonly known, yerba buena is the traditional choice in Cuba, the birthplace of the mojito. We are particular about using this authentic mint to deliver the true flavor of the cocktail.

These sweet, high-sugar-content mandarins are featured in cocktails and desserts across our restaurants. We work closely with trusted local farmers to incorporate Kanagawa-grown mikans into our botanical selection.

Our gin uses fresh domestic hops sourced from the adjoining brewery, NUMBER NINE BREWERY, located within the same facility as our distillery at QUAYS pacific grill. This direct collaboration ensures unparalleled freshness and quality.

The beans are roasted at HAMMERHEAD ROASTERY, our in-house coffee roastery also located inside QUAYS pacific grill. The same beans used in our restaurant’s offerings are distilled, ensuring high-quality aroma and flavor in every drop.

Avocado seeds—not the fruit? That’s right. At our five Mexican restaurants, avocados are used in abundance for popular dishes like guacamole. Rather than discarding the pits, we repurpose them as a unique and sustainable botanical in our gin. This reflects our identity as a restaurant-driven distillery, turning food waste into flavor while embracing eco-conscious practices.
