Take Osteria IL VIAGGIO, our wood-fired Italian restaurant.
Open the list and you’ll find a vintage map of Italy at the center. Around it? Wines from all over the country—Tuscany, Piedmont, Sicily—each one personally sourced by the chef and sommelier during trips to Italy. The lineup is curated to pair perfectly with wood-fired cuisine. In fact, nearly a quarter of the wines come from Tuscany alone. That’s how much we believe in the pairing.
And just for fun, the wines are listed in order of elevation. Why not explore by altitude instead of region or varietal?
Then there’s THE RIGOLETTO Shibuya, where the energy is young, diverse, and international.
Of course, the list includes wines that match the menu—mainly meat-forward dishes—but it’s also curated with the local guests in mind.

Rather than leaning on big brands or mass-market labels, we focus on small-production wineries with real stories behind them.
Our philosophy is clear: we don’t aim to “sell wine.” We aim to create discoveries—moments of “wow” for our guests.
Many of our wines are from lesser-known producers and limited allocations.
Managing inventory isn’t always easy, but we’ve kept at it for over 20 years—because we believe every glass should enhance the restaurant experience in a way that feels personal and unforgettable.

The House Selection has become a signature of HUGE. But when we launched the concept, it was seen as bold—even reckless. We were offering wines of different market values, all at a flat rate. No compromise on quality. No shortcuts in sourcing. Profitability? Not always.
But thanks to the success of RIGOLETTO and the growing power of HUGE’s wine program, things began to shift.
Producers began approaching us, hoping to be featured on our wine list. Today, our House Selection features dozens of wines, all offered at ¥3,800 (excluding tax)—an unbeatable price point for the quality.
