A wine list says everything about a restaurant’s attitude toward wine. And at HUGE, we take it very seriously.

When you open a wine list, you immediately get a feel for how much a restaurant cares about wine.

Is the lineup well-balanced? Are the descriptions clear and honest? Is there a sense of storytelling behind the selections?

How a restaurant handles wine is a direct reflection of how it values hospitality.

At HUGE, we believe in curating wine lists that speak from the heart—of the restaurant, of the team, and of the experience we want you to have.

Ask for a wine list at RIGOLETTO, and you’ll notice something: a team member opens the pages in front of you and hands it over with intention. The first section features our House Selection, where every bottle is offered at a single flat price. Turn the page, and you’ll discover a wide range of boutique wines, selected from around the world.

Each restaurant offers dozens of wines—but no two wine lists are the same.

That’s because every lineup is carefully chosen by our corporate sommelier Hiroshi Ishida, our wine buyers, and each restaurant’s in-house wine lead.

From concept to crowd, from menu to mood, every bottle is selected with purpose.

At HUGE, every wine list is original.

Different concepts. Different neighborhoods. Different guests. And of course, different wines.

Because no two restaurants are the same, no two wine lists should be either.

From scratch, for every restaurant—we build lists that match the space, the people, and the personality of each location.

Take Osteria IL VIAGGIO, our wood-fired Italian restaurant.

Open the list and you’ll find a vintage map of Italy at the center. Around it? Wines from all over the country—Tuscany, Piedmont, Sicily—each one personally sourced by the chef and sommelier during trips to Italy. The lineup is curated to pair perfectly with wood-fired cuisine. In fact, nearly a quarter of the wines come from Tuscany alone. That’s how much we believe in the pairing.

And just for fun, the wines are listed in order of elevation. Why not explore by altitude instead of region or varietal?

Then there’s THE RIGOLETTO Shibuya, where the energy is young, diverse, and international.

Of course, the list includes wines that match the menu—mainly meat-forward dishes—but it’s also curated with the local guests in mind.

“Shibuya welcomes everyone—business dinners, wine beginners, international travelers. So we made sure the list is premium enough for professionals, but easy to navigate for first-timers too,”
says Ishida.

True to that vision, the list centers around approachable price points.

On the House Wine page, you’ll even find hand-illustrated wine labels to help guests choose based on look and feel—not just grape or region. A friendly touch that makes wine more accessible to all.


Not famous, but always worth discovering.

Most of the wines on a HUGE list won’t be ones you recognize from the supermarket.

And that’s the point.

Rather than leaning on big brands or mass-market labels, we focus on small-production wineries with real stories behind them.

Our philosophy is clear: we don’t aim to “sell wine.” We aim to create discoveries—moments of “wow” for our guests.

Many of our wines are from lesser-known producers and limited allocations.

Managing inventory isn’t always easy, but we’ve kept at it for over 20 years—because we believe every glass should enhance the restaurant experience in a way that feels personal and unforgettable.

The House Selection has become a signature of HUGE. But when we launched the concept, it was seen as bold—even reckless. We were offering wines of different market values, all at a flat rate. No compromise on quality. No shortcuts in sourcing. Profitability? Not always.

But thanks to the success of RIGOLETTO and the growing power of HUGE’s wine program, things began to shift.

Producers began approaching us, hoping to be featured on our wine list. Today, our House Selection features dozens of wines, all offered at ¥3,800 (excluding tax)—an unbeatable price point for the quality.
