On Thursday, November 19, 2026, RESTAURANT DAZZLE in Ginza will host il Club EDONISTA.
This edition’s theme is “The Cuisine and Wines of Piedmont.” Executive Chef Naoyuki Kojima has created a special one-night-only course featuring the flavors of autumn, including white truffles and carefully selected Japanese game.

A rare vintage wine will also make a special appearance for the evening🍾
A magnum of 2007 Barbaresco, carefully cellared at DAZZLE, will be uncorked exclusively for this occasion. After nearly 20 years of aging, this exceptional bottle is ready to be enjoyed.

White truffles, game, and wine. An evening to savor the flavors of late autumn.

The evening begins at the welcome bar with the “EDONISTA SPRITZ,” an original cocktail made with vermouth from Turin. After moving to the dining room, guests will raise a glass of Champagne alongside house-made mortadella. With good food and conversation shared around the table, the night of il Club EDONISTA begins.

The wine selection will focus mainly on Piedmont. Following the Champagne toast, we will serve a distinctive Piedmontese red made entirely from the native Ruchè grape. Floral aromas reminiscent of roses meet rich fruit and subtle spice, creating a wine full of character.
To accompany the tajarin with Italian white truffle, we will open a very special vintage: a magnum of 2007 Barbaresco, carefully cellared at DAZZLE. After nearly 20 years of aging, this exceptional bottle will be uncorked exclusively for the evening.

Ezo venison carpaccio from Shiranuka, Hokkaido, hunted by the “legendary game hunter.”

Ezo venison is served as a carpaccio, allowing its natural richness and delicate flavor to shine. Paired with celeriac, Gorgonzola, and cassis sauce, it is a special dish created for this dinner.
The venison comes from Shiranuka, Hokkaido, and is supplied by Mr. Matsuno, known as the “legendary game hunter.” His expert handling and meticulous preparation result in exceptionally clean-tasting venison with little gaminess, allowing the true flavor of the meat to stand out.

Highly regarded by renowned restaurants across Japan, this exceptional venison is a taste not to be missed.

Roasted wild boar from Fukuyama, Hiroshima, served with chestnuts and seasonal French mushrooms.

The robust, savory flavor of wild boar is complemented by the gentle sweetness of chestnuts and the rich aroma of mushrooms, creating a deeply autumnal dish with layers of flavor.
The pairing is Barolo 2020. Classic and full-bodied yet elegant, its generous fruit and supple tannins beautifully complement the richness and roasted character of the wild boar, enhancing the lingering depth of the game.
