No More Plastic Straws
We stopped offering disposable plastic straws in 2018 to reduce our environmental impact. Plastic waste poses a serious threat to our oceans, and small items like straws are especially dangerous—they’re hard to clean up and can be fatal to marine life. As a result, we now serve drinks either with a reusable metal straw or without a straw by default. With the understanding and support of our customers, we are taking small but steady steps toward a more sustainable society.

Avocado Pits Reimagined as a Unique Botanical in Our Craft Gin
Our in-house craft gin, Number Eight Gin, features avocado pits—sourced from Mexican restaurants—as one of its distinctive and eco-friendly botanicals. Recognizing the hidden value in avocado pits that are usually thrown away, we’ve reused them as a fragrant and flavorful botanical—contributing to both food waste reduction and smarter resource use. By turning restaurant by-products into something meaningful, we embody our dedication to sustainable, circular creation. Savor a drink that offers both a fragrant twist and an unexpected delight.

Direct Trade Coffee
All of the coffee beans we use are sourced through direct trade, ensuring a clear connection to the farmers who grow them. Working directly with farmers—without going through intermediaries—allows us to pay fair prices that help sustain their farms and improve growing conditions. With full traceability, we know exactly where, how, and by whom our coffee beans are grown—allowing us to consistently deliver high-quality coffee. Brewery By-Product,
Reimagined for Your Pup
Rather than throwing it away, NUMBER NINE BREWERY puts spent grain—the nutritious by-product of beer brewing—to good use, thanks to its high fiber, protein, and mineral content. As part of this sustainable initiative, we craft dog biscuits using natural ingredients and incorporate spent grain into the recipe. Free from preservatives and artificial colors, these snacks are a wholesome, worry-free option for your beloved dog. Aiming to reduce food waste and build a circular society, we offer new choices where deliciousness and kindness can coexist in everyday life.

Our Commitment to Responsible Sourcing
As part of our commitment to sustainable sourcing, we created an internal Produce Department—now our Purchasing Department—with the authority to buy directly at wholesale markets. All produce used in our restaurants is sourced and managed through a centralized system. Currently, more than 51% of our produce is purchased directly from farmers, allowing us to build fair and lasting relationships with producers. In addition to sourcing seafood from the northern market, we also purchase directly from local fishermen. By minimizing the use of intermediaries, we ensure the freshness, quality, and transparency of our ingredients, while supporting a sustainable local food cycle.

At NUMBER NINE BREWERY, we turn overlooked fruits—like thinned Shonan Gold and mandarins that never reach the market—into unique seasonal craft beers, all in the spirit of reducing food waste. Fruits that don’t meet market standards in size or appearance still hold great flavor and nutrition. By incorporating them into our brewing process, we turn what would be waste into value—creating sustainable beer that supports local agriculture. Through initiatives that combine great taste with circular practices, we are expanding the possibilities of sustainable food and craftsmanship.
