At cucina del NABUCCO, you can enjoy fresh cheese made from 100% Hida raw milk, which is made first thing in the morning at the cheese factory in the store. The most popular item is the seasonal “Melted Seasonal Fruit Burrata,” which is filled with seasonal fruits. It is said that “freshness is vital,” and this Burrata can be enjoyed in its freshest state.
The summer season’s most popular product, “Ripe Mango,” is now available as part of Seasonal Fruit Burrata’s summer-only series.
The mangoes, which emit an enticing aroma reminiscent of the tropics, are melt-in-your-mouth sweetness, and are packed tightly inside the round, drawstring-shaped cheese.
When you put a knife into the cheese, you can feel its elasticity. The moment the mango and whipped cream start to overflow, you will want to capture it on video.
Underneath the cheese is a layer of thin, fluffy slices of 18-month aged Parma prosciutto.

All fresh cheeses served at cucina del NABUCCO, including the seasonal fruit burrata, are carefully made one by one in our cheese factory.
We use fresh raw milk from Hida cows raised in the rich nature of Hida in Gifu. In order to make delicious cheese, we control the freshness and temperature of the raw milk thoroughly every day, and handle it “gently and without touching” to pursue the smooth taste of the cheese. This is cucina del NABUCCO’s commitment to cheese making.
In addition to Burrata, fresh cheeses such as Mozzarella, Ricotta, Stracciatella, etc. are available in the restaurant and can be enjoyed with seasonal ingredients.
