Every morning, NABUCCO’S cheesemaker carefully make cheese in the restaurant. We use fresh raw milk from Hida. In order to make the best cheese, the freshness and temperature of the raw milk are thoroughly controlled daily, and the cheese is treated “gently and with as little touch” in pursuit of the smooth taste. Freshly made cheese is delivered directly to you on the same day!

▼Burrata Cheese
Burrata, which has been rapidly popularity in recent years, is mozzarella cheese combined with fresh cream called “stracciatella” and thinly sliced mozzarella to shape it into a cute drawstring.

When you stick a knife in, the thick cream and mozzarella overflow from the inside. The rich, milky flavor goes perfectly with sourness of fruit.

 

▼ Ricotta cheese
Ricotta cheese, a two-time champion at the Kanto Natural Cheese Contest. It has natural sweetness from Hida raw milk, yet it is rich in flavor and has a soft and fluffy texture that only freshly made cheese can bring. We recommend to eat it with seasonal fruits and honey.

▼ Mozzarella Affumicata
Mozzarella is smoked with Sakura chips, so when you open the package, you can feel the aromatic and slightly sweet aroma of smoked mozzarella. This cheese is a NABUCCO staple loved since the grand opening and still has many fans. The surface is smooth, the texture is bouncy, and the rich, milky flavor. Grill it in a pan until it gets a bit melty and slightly charred. Enjoy it as a snack!

 

Along with the cheese, you can enjoy a special bottle of wine at home, selected by HUGE’s corporate sommelier from a list of rare and valuable wines from renowned wineries around the world, which are only available in HUGE restaurants in Japan. An excellent Verdejo with a smooth mouthfeel and a pleasant harmony of soft acidity and mellow texture.
This white wine has a pure, green aroma that starts with a meadow-like nuance, followed by refreshing aromas of citrus and herbs, and a fresh, fruity, Muscat-like acidity and fruitiness that stands out and is clean and crisp through to the finish. It is an excellent match for dishes such as appetizers with olive oil and herbs. Please enjoy it well chilled with fresh cheese from cucina del NABUCCO.

Craft beer brewed at “NUMBER NINE BREWERY” located at QUAYS pacific grill in Minato Mirai, Yokohama, will be delivered in a special Father’s Day package. The beer is canned immediately after brewing, so you can enjoy the fresh hop aroma and fruity flavor at home.
The package features a cute design with mustache and bow tie, all designed in the image of your father.

■#9 Hazy (abv. 5.0%)

#9 (Number Nine) Hazy won the gold medal at the Japan Great Beer Awards 2022.

This is juicy pale ale with a great mouthfeel. To let you enjoy the full aroma of hops, juniper berries and coriander are added to make the outline stand out. Wine yeast is also contained, and the combination of multiple yeasts gives a citrus-like aroma that is unique to Number Nine Hazy, and you can feel the flavor directly from the first sip.

The beer is cloudy in order to give it a “soft mouthfeel” from the wheat and oats, but it is not as bitter as it looks, which makes for an interesting gap. We can confidently recommend this beer. Even if you are not a fan of bitter beers, we hope you will enjoy the balance of flavor and the gorgeous aroma of hops.

 

■Hammer Head Ale  (abv. 4.0%)

Hammerhead Ale, which has been brewed since the grand opening, is NUMBER NINE BREWERY’s most popular beer. This ale beer is made with malt and hops from New Zealand, and is characterized by its low bitterness and refreshing aroma and malt flavor. New Zealand hops have a very distinctive aroma. The fruity, gorgeous aroma of Sauvignon Blanc or Pinot Grigio can only be produced with these hops.

Brewmaster Kengo Saito, who has experience brewing beer in New Zealand, spent two years persuading malts that were unavailable in Japan to be imported to Japan, and this pale ale is full of his passion.

 

■QUAYS Pilsner (abv. 4.6%)

QUAYS Pilsner is brewed with 100% domestically grown hops. It is brewed with hops from the Kobayashi Hop Farm in Hokuto City, Yamanashi Prefecture.

Brewed with a lavish amount of domestically grown hops, the Pilsner has a gentle aroma and a clean, refreshing taste that will make you want to drink it over and over again. Hops are usually stored in pellets, but the drawback is that the aroma is lost when they are processed. Because the aroma of Japanese hops is extremely delicate, NUMBER NINE BREWERY uses fresh hops that have just been picked, dried, and stored in a vacuum to preserve their freshness. QUAYS pacific grill is the only restaurant where you can enjoy beer made with domestic hops all year round.

This beer was born from Brewmaster Saito’s strong desire to establish “Japanese Pilsner” as a style that has not yet been recognized.

It has a beautiful and delicate taste just like Japanese cuisine, yet it has a depth that makes you want to bring it back to your mouth again. Our goal is to create a beer that you will never get tired of drinking.

Gold Award-winning “Arata Sausage

Winner of the Gold Award at the 2019 “International Contest organized by IFFA German Meat Association”.
A coarsely ground sausage with a natural and gentle flavor, made without using any chemical seasonings or food additives. Garlic and white pepper give it aroma. As the sausage’s name shows, it is a thick sausage! Grill it and enjoy the “crispy” texture of the skin.

 

■Fresh cheese “Cachocavallo” from cucina del NABUCCO

Cachocavallo, which originated in Naples, has a unique shape resembling a gourd. It has a firm texture and a rich, milky flavor. It can be enjoyed as is for its bouncy, or grilled lightly for a crispy surface and a thicker, chewier texture inside. It also goes well with bread, ham, and bacon. We will send you a recipe that show the best way to enjoy Cacho Cavallo, by NABUCCO’s chef!
